Formulation

Manufacturing Instructions

1. Coarse mince pre-chilled lean meat and fat (+2°C) through a 13 mm plate.
2. Evenly sprinkle the spice pack over the minced meat and mix until uniformly distributed.
3. Add the ice/cold water and mix until all free moisture is absorbed by the mince.
4. Mince the mixture through a 3 mm or 5 mm plate.
5. Form into burger patties.
6. Pack and refrigerate at +4°C for sale.

BEEF SAUSAGE R/P is a seasoned ready pack containing preservatives and technical ingredients for the manufacture of seasoned raw beef sausages with the following organoleptic characteristics when fried or grilled:

Taste

• Very meaty sausage flavour
• Delicious rounded barbeque flavour
• Medium garlic flavour
• Noticeable medium black pepper burn

Appearance

• Firm textured sausage
• Grey to brown cooked colour typical of cooked beef mince

Intended Use

For the manufacture of seasoned raw beef sausages.

Formulation

Manufacturing Instructions

1. Receive raw materials according to the meat block specified on the pack label.
2. Coarse mince frozen lean beef and fat through a 13 mm or 20 mm plate.
3. Evenly sprinkle contents of the spice pack over the minced meat and mix until uniformly distributed.
4. Add the ice water and mix until all free moisture is absorbed by the mince.
5. Mince the mixture again through a 5 mm plate.
6. Fill into sheep/lamb casings.
   • Recommended casing diameter: 20 mm – 24 mm
7. Pack and refrigerate at +1°C to +4°C for sale.
