FARM-BRAAI BOEREWORS is a popular ready pack developed for producing traditional boerewors with:

• Prominent nutmeg flavour
• Strong roasted coriander notes
• Mild thyme and black pepper taste
• No lingering pepper burn

The product also provides a very attractive raw sausage colour.

Intended Use

For the manufacture of traditional boerewors sausages.

Formulation

Manufacturing Instructions

1. Coarse mince frozen lean meat and fat through a 13 mm or 20 mm plate.
2. Evenly sprinkle contents of the spice pack over the minced meat and mix until uniformly distributed.
3. Add the ice water and mix until all free moisture is absorbed by the mince.
4. Mince the mixture again through a 5 mm plate.
5. Fill into specified casings.
   • Recommended casing diameter: 22 mm – 35 mm
6. Pack and refrigerate at +1°C to +4°C for sale.

BEEF SAUSAGE R/P is a seasoned ready pack containing preservatives and technical ingredients for the manufacture of seasoned raw beef sausages with the following organoleptic characteristics when fried or grilled:

• Medium garlic flavour
• Noticeable medium black pepper burn

• Firm textured sausage
• Grey to brown cooked colour typical of cooked beef mince
